Cinnamon Swirl Quick Bread

Ingredients:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 cup milk
  • 1/3 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar
  • 1 tablespoon ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or cooking spray.
  2. In a medium bowl, whisk together the flour, baking powder, 1 teaspoon of ground cinnamon, and salt.
  3. In a separate large mixing bowl, beat the granulated sugar and egg together until light and fluffy. Stir in the milk, melted butter, and vanilla extract.
  4. Slowly mix the dry ingredients into the wet ingredients until just combined.
  5. In a small bowl, mix together the brown sugar and 1 tablespoon of ground cinnamon to make the cinnamon swirl.
  6. Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon swirl mixture over the batter. Repeat with the remaining batter and cinnamon swirl mixture. Use a butter knife to swirl the cinnamon mixture through the batter.
  7. Bake the bread in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before removing it to a wire rack to cool completely. Serve warm or at room temperature.
