Ingredients:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small cubes
- 1/2 cup granulated sugar
- 1 large egg
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 cup mixed diced fresh or frozen fruits (such as berries, peaches, apricots)
Instructions:
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a separate large mixing bowl, use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs. Stir in the sugar.
- In a small bowl, beat the egg, milk, and vanilla extract together. Stir this mixture into the flour mixture until a dough forms.
- Gently fold in the diced fruits into the dough.
- On a lightly floured surface, knead the dough gently for about 1 minute.
- Roll out the dough to about 1/2 inch thickness and cut out the biscuits using a round cutter or a glass.
- Place the biscuits on the prepared baking sheet.
- Bake the biscuits for 12-15 minutes, or until they are lightly golden brown and a toothpick inserted into the center comes out clean.
- Remove the biscuits from the oven and place them on a wire rack to cool. Serve warm or at room temperature.
Note: You can also brush the top of the biscuits with a beaten egg or milk before baking for a golden brown and shiny finish.
